High Protein Carbonara Gnocchi | 46 gr Protein

High Protein Carbonara Gnocchi: creamy and delicious!

Ingredients

For 2 portions:

* 250 gr gnocchi
* 120 g egg whites + 1 whole egg
* 60 g Eatlean high protein grated Cheese 
* 200 g smoked chicken breast
* 5 ml extra virgin olive oil
* Freshly ground black pepper
* Salt

Mix the eggs and cheese. In a small bowl, whisk together the egg whites, whole egg, and grated Parmesan. Add a generous grind of black pepper and a pinch of salt. Set aside.
Cook the chicken.Heat a non-stick pan with a teaspoon of oil. Add the chicken (cut in small pieces) and sauté until golden.
Boil the gnocchi. Bring a pot of salted water to a gentle boil. Add the gnocchi and cook just until they float to the surface (2–3 minutes). Save a little of the cooking water before draining.
Increase the pan to medium heat, then add the drained gnocchi to the chicken. Mix gently for 30 seconds.
Create the creamy sauce. Remove the pan from heat. Pour in the egg and cheese mixture and stir quickly, letting the residual heat make it creamy (not scrambled!). Add a splash of the reserved gnocchi water if you want a silkier texture.
Finish and serve. Plate your gnocchi and top with ground black pepper.
