INGREDIENTS
👻For the cookies (12 pieces)

60 gr almond flour
2 tablespoons butter, softened
1 tablespoon erythritol
Half a teaspoon of cinnamon or winter spices

👻For the cheese icing

100 gr cream cheese
1 tablespoon sweetener
1 tablespoon vanilla extract
4 squares @funkyfatfoods, shredded
90 ml heavy cream, to whip
👻For decoration

@funkyfatfoods Dark Choc, as needed

INSTRUCTIONS:

In a bowl, combine the ingredients for the cookies and mix well. Divide the dough into 12 balls (teaspoon size) and make your round cookie. Cook for 8-10 minutes180C.
In the meantime, prepare the cheese icing.

Prepare the icing, adding the cream cheese, erythritol, and vanilla extract, into a bowl. Mix until fluffy. Add the Funky Fat White, shredded into flakes.
Whip the heavy cream, and slowly incorporate it into the cheese filling.

Using a pastry bag, spread some filling in your cookies bases, making your ghosts. Add a few pieces of Funky Fat Dark, to make the eyes of your ghosts.

Set in fridge until firm for 2-3 hours before serving.

For the pumpkin cream:
300 g pumpkin
2 tbs pumpkin spices
2 tbs vanilla extract
2 tbs Ery-Bronze @steviala
2 tbs almond flour
200 ml water
80 ml heavy cream
For the bread:
200 gr almond flour
1 teaspoon baking powder
250 ml almond milk
50 gr coconut flour
2 eggs
2-3 drops orange aroma
For decoration:
@steviala Frost, as needed

Cook the pumpkin for about 30 min- until roasted. Mix all the ingredients for the cream, using a kitchen robot. Set aside.
Mix the ingredients for the bread starting from the powdered ones.
Add in the liquid ones. Incorporate the pumpkin cream, until smooth.
Cook for 50-60 min (180).
Remove the bread from the oven, let it cool down, decore with Steviala Frost and serve 🎃

INGREDIENTS

For the crust
120 gr almond flour @steviala
50 gr Ery-pure @steviala
2 tablespoons butter, softened
1 egg
Pinch of salt

For the Homemade keto pumpkin pie filling
150 grams of pumpkin (in blocks, previously roasted)
1 tablespoon almond flour @steviala
1 tablespoon Ery-Bronze @steviala
1-2 teaspoons pumpkin spices
1 tablespoon vanilla extract
1 egg
40 ml heavy cream

INSTRUCTIONS
Preheat oven to 180 C. In a medium bowl, combine the dry ingredients for the pie crust. Add the other ingredients and shape the base of the pie in a round baking tray (about 20 cm in diameter).

Cook for 15 minutes. In the meantime, prepare your pumpkin puree, combining all the ingredients in a food processor, and blend until smooth.

Preheat oven to 230C. Add the pumpkin pie filling on top of the crust base.
Cook at the bottom rack for about 15 minutes.
Carefully, move the pie to the middle rack, and cook for 30 minutes at 180C.

When the pie reaches room temperature, cut it into pieces and serve it with sugar-free whipped cream.
