Low-Calorie Strawberry Muffins | 58 calories | Low Fat

Low-Calorie Strawberry Muffins: 58 Calories Per Muffin — and still delicious!

Ingredients

for 8 muffins:

  • 120 ml egg whites (you can also use eggs but in this case you get a thicker dough so you may need to use more yogurt or add milk)
  • 50 gr Greek Yogurt 0% fat
  • 100 gr flour, the one that you prefer
  • Optional: few drops of sweetener
  • 1 teaspoon baking powder
  • 120 gr strawberries – to cut into pieces

Tools Needed

  • 1 bowl or stand mixer
  • 1 oven tray
  • parchment paper
  • 8 muffins cups

Procedure

  1. In a bowl, mix the liquid ingredients: egg whites, Greek yogurt, and optional sweetener.
  2. Add the dry ingredients — flour and baking powder — and mix until you get a smooth batter.
  3. Cut the strawberries into small pieces and gently fold them into the mixture using a spatula.
  4. Divide the batter evenly into 8 muffin molds.
  5. Bake at 180°C (356°F) for 15–18 minutes, or until a toothpick comes out clean.
