Low-Calorie Strawberry Muffins: 58 Calories Per Muffin — and still delicious!
Ingredients
for 8 muffins:
- 120 ml egg whites (you can also use eggs but in this case you get a thicker dough so you may need to use more yogurt or add milk)
- 50 gr Greek Yogurt 0% fat
- 100 gr flour, the one that you prefer
- Optional: few drops of sweetener
- 1 teaspoon baking powder
- 120 gr strawberries – to cut into pieces
Tools Needed
- 1 bowl or stand mixer
- 1 oven tray
- parchment paper
- 8 muffins cups
Procedure
- In a bowl, mix the liquid ingredients: egg whites, Greek yogurt, and optional sweetener.
- Add the dry ingredients — flour and baking powder — and mix until you get a smooth batter.
- Cut the strawberries into small pieces and gently fold them into the mixture using a spatula.
- Divide the batter evenly into 8 muffin molds.
- Bake at 180°C (356°F) for 15–18 minutes, or until a toothpick comes out clean.
