Light Pasta with Smoked Salmon: creamy and delicious – ready in 15 minutes!
Ingredients
For 2 portions:
- 140–160 g pasta (spaghetti, linguine, or short pasta)
- 150–200 g smoked salmon, sliced
- 1 small shallot or ½ small onion (optional)
- 1 tbsp olive oil
- Zest of ½ lemon
- Juice of ¼–½ lemon (to taste)
- 2–3 tbsp pasta cooking water
- Fresh parsley or dill (optional)
- Black pepper (no salt needed-salmon is salty)
Optional (choose ONE if you want it slightly creamy but still light):
- 1–2 tbsp Greek yogurt or
- 1–2 tbsp light cream or
- A splash of milk
Tools Needed
- 1 medium pan
- 1 medium pot
Instructions
Cook the pasta, until al dente. I do not recommend to add salt to the water, as salmon is already salty enough. Reserve some cooking water.
Sauté gently the shallot/onion in olive oil over low heat until soft (don’t brown).
Add a little pasta water to the pan to keep it light.
Turn off the heat, then add:
- Smoked salmon
- Lemon zest
- Lemon juice
- (Optional creamy element)
Add the drained pasta and toss gently, loosening with more pasta water if needed.
Finish with black pepper and fresh herbs.
