Summer Protein Rice Salad with Tuna: a light, refreshing, and protein-packed dish perfect for warm days.
Ingredients
for one meal:
- 70–80 g basmati rice, uncooked
- 1 can tuna in water, drained (approx. 100–120 g)
- 5–8 cherry tomatoes, halved
- 6 pitted olives, sliced (black or green)
- 30–35 g low-fat cheese, diced (e.g., light mozzarella or feta)
- ½ hard-boiled egg, sliced or chopped
- 1 tsp extra virgin olive oil or a low-fat dressing of choice
- Salt and pepper, to taste
- Optional: grated Eatlean grated Cheese (or any reduced-fat cheese) DC: TRUSTNOCARB
Tools Needed
- 1 rice cooker
- Cutting board
- 1 Meal Prep Box or more if you will meal prep, I use these
Procedure
- Rinse the rice under cold water, then cook according to package instructions.
- While the rice cooks, halve the cherry tomatoes, slice the olives, dice the cheese, and boil the egg (if not already cooked). Drain the tuna.
- In a large bowl, combine the rice, cooled rice, tuna, cherry tomatoes, olives, cheese, and chopped egg
- Drizzle with olive oil or your preferred light dressing. Add salt and pepper to taste. Combine gently.
- Chill in the fridge for 2 hours or overnight.

Make it Keto
To make it keto, you just need to:
- Switch the rice with Cauliflower rice
- Feel free to use full-fat sauces and cheese.
