Summer Protein Pasta Salad with Tuna 

Summer Protein Pasta Salad with Tuna: a light, refreshing, and protein-packed dish perfect for warm days.

Ingredients

for one meal:

  • 70–80 g pasta, uncooked
  • 1 can tuna in water, drained (approx. 100–120 g)
  • 5–8 cherry tomatoes, halved
  • 6 pitted olives, sliced (black or green)
  • 30–35 g low-fat cheese, diced (e.g., light mozzarella or feta)
  • ½ hard-boiled egg, sliced or chopped
  • 1 tsp extra virgin olive oil or a low-fat dressing of choice
  • Salt and pepper, to taste
  • Optional: grated Eatlean grated Cheese (or any reduced-fat cheese) DC: TRUSTNOCARB

Tools Needed

  • 1 pot to cook the pasta
  • Cutting board
  • 1 Meal Prep Box or more if you will meal prep, I use these

Procedure

  1. Weight and cook the pasta according to package instructions.
  2. While the pasta cooks, halve the cherry tomatoes, slice the olives, dice the cheese, and boil the egg (if not already cooked). Drain the tuna.
  3. In a large bowl, combine the pasta, cooled rice, tuna, cherry tomatoes, olives, cheese, and chopped egg
  4. Drizzle with olive oil or your preferred light dressing. Add salt and pepper to taste. Combine gently.
  5. Chill in the fridge for 2 hours or overnight.

To make it keto, you just need to:

  • Switch the pasta with keto friendly pasta
  • Feel free to use full-fat sauces and cheese.

    Just started 2 months ago with my keto journey and found your site today while looking for new recipes and products.
    A good keto alternative for normal pasta ( and much more) is from http://www.steiners.shop. Unfortunately not yet available in Dutch stores but you can order it online and above 75 euros they will send it for free to the Netherlands.

    We’ve already tried several products and are very satisfied. Of course, they’re not cheap, and sometimes the taste and texture take some getting used to, but it does make eating a bit more normal.
