One Pot Chicken & Rice: delicious, easy to make, great meal prep.
Ingredients
For 4 portions:
- 280 g rice
- 4 chicken breasts, cubed
- 800ml chicken broth (I use 1 jar of Kleinste Soepfabriek + 1 jars filled with water)
- 200 g cottage cheese
- 200 g greek yogurt
- 8 tbsp tomato sauce or salsa, I use Santa Maria Chunky wrap salsa
- Spices, garlic, onion, salt, black pepper, cajun
- Fresh Lemon juice, as needed
- 100 gr Eatlean grated Cheese (or any reduced-fat cheese), grated
Tools Needed
- 4 oven-safe meal prep containers, suitable for the oven
Procedure
- Preheat your oven to 180°C.
- In your meal prep containers, layer the rice and cubed chicken breast.
- Pour in the chicken broth, then add the cottage cheese, Greek yogurt, and salsa.
- Add the spices: garlic, chopped onion, salt, pepper, and Cajun seasoning.
- Squeeze a tiny bit of lemon juice over the mixture.
- Stir everything together thoroughly, ensuring the spices and dairy ingredients are evenly combined.
- Sprinkle the Eatlean cheese on top.
- Bake for 30–40 minutes, or until the chicken is fully cooked and the rice is tender.
- Let cool slightly before serving or storing.

To make it keto, you just need to switch the rice with shirataki rice.
