What I Eat in May 2025 | Favorite Meals

About two months ago, I started following MyFitnessPal’s recommendation of approx 1,500 calories a day—regardless of my workouts.

Last month, in full Easter Eggs Euphoria, I made a promise to get back to discipline and consistency—not through extreme restrictions, but with a balanced approach. And I stuck to it.

I stayed committed to my workouts and meal prep, prioritizing high-protein meals, but I also made room for snacks and the occasional spritz. I kept portions small and made sure the rest of my day was lean and nutrient-dense.

I even took a trip to Dublin, enjoyed the food and a few beers—and still saw visible results.

This month, I lost around 2 kilos. That’s a big win for me, especially after the slower progress I saw previously.

Honestly, it feels surreal to be seeing these changes while still eating carbs and pizza. The ghost of keto still haunts me a little—but this balance feels so much better.

Breakfast/Post workout

Lately, I have been loving pairing the protein corn crackers with cottage cheese and fruit.
I also love the combo with egg whites, to boost the protein.

A staple is low-fat yogurt with berries and my beloved protein puffies from Prozis.

When I resist, I also try to fast until lunch, and a good protein coffee really helps me stay full and energized until then.

Macros: Approx. 200 calories | 14 carbs | 1 g fat | 27 g protein (34%-2%-64%)

For lunch, I usually alternate between my favorite meal preps (which I share on my blog!) and quicker options—like canned tuna or chicken with legumes.

Spaghetti with Meat Balls

This month, I’m focusing on legumes like black beans, kidney beans, lentils, and chickpeas. They’re easy, filling, and packed with nutrients.

Macros: Approx. 550 calories | 67 g carbs | 5.8 fat | 40 g protein (55%-11%-34%)

Afternoon snack

I definitely get hungry in the afternoon! My go-to snack is a mix of yogurt, berries, and puffies—so satisfying.

I’ve also tried lean bagels recently, and they’re surprisingly delicious.

Another filling option I love is corn crackers topped with egg whites and a bit of cream cheese. Simple, tasty, and keeps me going!

Dinner

What I Eat in May 2025

For dinner, I usually go with legumes paired with chicken or lean beef, along with a side of salad or broccoli. It’s simple, nutritious, and really filling!

After Dinner Snack

What I Eat in May 2025

This month proved that even within my ~1,500 calorie range, I can still enjoy an after-dinner snack and continue losing weight.

My favorite evening treats lately have been low-sugar snacks from Prozis and the Protein Chocolate Ice Cream from AH. If you haven’t tried it yet, check out my review HERE.

I also discovered the Protein Choco Balls from XXL Nutrition—an amazing crunchy snack that satisfies cravings without causing any drama on the scale. I’ve tried the white chocolate version so far (so good!), and I’m definitely planning to try the regular chocolate one next.
