Creamy Cajun Chicken Pasta

Creamy Cajun Chicken Pasta, creamy, high-protein, and easy to make – perfect for meal prep!

Ingredients

For 4 portions:

  • ½ onion, diced
  • 125 gr mushrooms (champignons), sliced
  • 1 red bell pepper, diced
  • 400 gr chicken breast, cut into bite-sized pieces
  • 1 tbsp Cajun spices
  • 280 gr pasta of choice
  • 600 ml chicken broth (I use 1 jar of Kleinste Soepfabriek + 2 jars filled with water)
  • 100 gr Philadelphia Light cream cheese
  • Oil, as needed, to cook
  • Final touch: Chopped chives for garnish

Tools Needed

  • 1 large pan (35 cm or larger)
  • Cutting board or Kitchen Robot
  • 1 small pot, to heat the broth
  • 4 Meal Prep Boxes, I use these

Procedure

  1. Chop & Cook Veggies: Chop the red bell pepper and mushrooms. Cook them in a pan until well done, then set aside.
  2. Cook Chicken: Cut the chicken into medium pieces. Add to the same pan, cooking until no pink parts remain.
  3. Combine Ingredients: Add the cooked pepper and mushrooms back to the pan with the chicken. Stir in Cajun spices, pasta, and chicken broth.
  4. Simmer: Cover with a lid and let it simmer for 15 minutes until pasta is tender.
  5. Make It Creamy: Add Philadelphia cream cheese, stirring until it’s fully blended for a creamy texture.
  6. Serve: Garnish with chopped chives.

Storing tips

Store for up to 5 days in the fridge, preferably in an airtight container.

Reheat tips

To prevent the pasta from drying out add a splash of milk, cream, or broth to the pasta before heating up.

Stovetop: Warm it in a pan over medium heat, stirring occasionally, until heated through.

Microwave: Place a damp paper towel over the container to trap steam. Microwave in short bursts of 30 seconds, stirring each time, until it’s warm.

Oven: Place the pasta in an oven-safe dish, cover with foil, and warm at 175°C for 10-15 minutes.
