Creamy Chicken Pesto Pasta: Delicious, creamy, high-protein, and easy to make—perfect for meal prep!
Ingredients
For 4 portions:
- 360 gr pasta (fusilli or penne, I use fusilli Liguori)
- 500 gr chicken breast, diced or cut into stripes
- 125 gr champignons, sliced
- 200 gr cherry tomates, shredded
- 80 gr low-fat pesto (I use Bertolli Pesto)
- 40 gr Philadelphia Light Cream Cheese
- Spices to taste (salt, garlic, Italian herbs, salt, pepper)
- Oil as needed, to cook
Tools Needed
- 1 pot (for pasta)
- 1 large pan (35 cm or larger)
- Cutting board or Kitchen Robot
- 4 Meal Prep Boxes, I use these
Procedure
- Cook the Pasta: In a pot, bring water to a boil and cook the pasta according to package instructions. Drain and set aside.
- Cook the Chicken and Vegetables: In a large pan, heat a small amount of olive oil. Add the chopped onion and sauté until golden brown. Add mushrooms, then the chicken. Cook until the chicken is no longer pink. Season with salt, garlic, Italian herbs, and pepper.
- Prepare the Sauce: In a small bowl, mix the Philadelphia cream cheese and pesto until smooth.
- Combine Everything: When the chicken is cooked, add the pasta to the pan and mix well.
Add the shredded cherry tomatoes and the creamy pesto mixture. Stir until everything is evenly combined. Serve hot or divide into 4 meal prep containers.

Storing tips
Store for up to 5 days in the fridge, preferably in an airtight container.
Reheat tips
To prevent the pasta from drying out add a splash of milk, cream, or broth to the pasta before heating up.
Stovetop: Warm it in a pan over medium heat, stirring occasionally, until heated through.
Microwave: Place a damp paper towel over the container to trap steam. Microwave in short bursts of 30 seconds, stirring each time, until it’s warm.
Oven: Place the pasta in an oven-safe dish, cover with foil, and warm at 175°C for 10-15 minutes.
