Cottage Cheese Protein Balls Recipe, delicious, 98 calories per ball.

Ingredients

For 12 protein balls:

FOR THE BALLS

FOR THE CHOCOLATE COVER

  • 50g sugar-free dark chocolate
  • 15g sugar-free white chocolate

Tools Needed

  • 1 food processor or blender (to mix the cottage cheese)
  • 1 bowl
  • Parchment Paper
  • Food Gloves

Procedure

  • Blend the cottage cheese until smooth.
  • In a medium bowl, mix all the ingredients for the dough balls until well combined.
  • Refrigerate the mixture for 30 minutes to reduce stickiness.
  • Line a baking sheet with parchment paper.
  • Put on food-safe gloves and roll the dough into evenly sized balls—you should get about 12 to 14.
  • Place the dough balls on the prepared baking sheet and transfer them to the freezer.
  • Freeze for at least 20 minutes.
  • Melt the chocolate (either using a double boiler or in the microwave).
  • Dip each dough ball into the melted chocolate. You can use toothpicks or a fork to make this easier. Let the excess chocolate drip off to ensure there’s enough for all the pralines. Then place the pralines back on the parchment-lined sheet
  • Refrigerate until the chocolate coating has hardened.
  • Melt the white chocolate (again, using a double boiler or microwave).
  • Remove the toothpicks and drizzle white chocolate over the dough balls for decoration. You can use a fork or cookie tool to create pretty lines.
