Summer Protein Rice Salad with Tuna

Summer Protein Rice Salad with Tuna: a light, refreshing, and protein-packed dish perfect for warm days.

Ingredients

for one meal:

  • 70–80 g basmati rice, uncooked
  • 1 can tuna in water, drained (approx. 100–120 g)
  • 5–8 cherry tomatoes, halved
  • 6 pitted olives, sliced (black or green)
  • 30–35 g low-fat cheese, diced (e.g., light mozzarella or feta)
  • ½ hard-boiled egg, sliced or chopped
  • 1 tsp extra virgin olive oil or a low-fat dressing of choice
  • Salt and pepper, to taste
  • Optional: grated Eatlean grated Cheese (or any reduced-fat cheese) DC: TRUSTNOCARB

Tools Needed

  • 1 rice cooker
  • Cutting board
  • 1 Meal Prep Box or more if you will meal prep, I use these

Procedure

  1. Rinse the rice under cold water, then cook according to package instructions.
  2. While the rice cooks, halve the cherry tomatoes, slice the olives, dice the cheese, and boil the egg (if not already cooked). Drain the tuna.
  3. In a large bowl, combine the rice, cooled rice, tuna, cherry tomatoes, olives, cheese, and chopped egg
  4. Drizzle with olive oil or your preferred light dressing. Add salt and pepper to taste. Combine gently.
  5. Chill in the fridge for 2 hours or overnight.

Macros (per serving): ~620 kcal | 70,7g carbs | 13,7g fat | 56g protein

Make it Keto

To make it keto, you just need to:

  • Switch the rice with Cauliflower rice
  • Feel free to use full-fat sauces and cheese.

Storing tips

Store in the fridge, in airtight containers for up to 4 days.
