Protein Banana Bread

Moist, protein-packed, and naturally sweet.

Ingredients

For 8 portions:

  • 2 ripe bananas
  • 2 whole eggs
  • 60 gr egg whites (2 egg whites)
  • 50g Greek yogurt
  • 30ml peanut butter or coconut oil
  • 40g erythritol or preferred sweetener
  • 40g WHEY protein powder (vanilla or unflavored) PROZIS | code SIMONAZ)
  • 100g flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • A pinch of salt
  • Cinnamon powder (or vanilla flavor)
  • 30g dark chocolate chips or nuts (optional)

Tools Needed

  • 1 medium bowl or stand mixer
  • 4 Meal Prep Boxes, I use these
  • baking sheet
  • 1 loaf pan

Procedure

  1. Preheat the oven to 180°C (350°F) and line a loaf pan with parchment paper.
  2. Mash the bananas in a bowl or stand mixer and add the eggs, egg whites, Greek yogurt, oil, and sweetener.
  3. Mix well. Add the other dry ingredients: protein powder, flours, baking powder, baking soda, and salt. Stir until well combined.
  4. Fold in the chocolate chips or nuts, if using.
  5. Pour the batter into the loaf pan and bake for about 35-40 minutes (check with a toothpick).Let it cool before slicing.

Calories and Macros of the Protein Banana Bread

Per serving: ~150 kcal | 21g carbs | 4 fat | 10.3g protein

Make it Keto

To make it keto, you just need to:

  • Replace the banana with banana extract
  • Switch the flour with almond flour – you can also use a part of coconut flour
  • Use sugar-free chocolate

Storing tips

Store for up to 5 days in the fridge or room temperature, preferably in an airtight container.
