Spaghetti with Meatballs: Delicious, high-protein, perfect for meal prep!

Ingredients

For 4 portions:

  • 500 gr lean ground beef
  • Spices to taste (salt, garlic, Italian herbs, pepper)
  • 500 g tomato sauce, without added sugar, I recommend Heinz
  • 320 gr pasta (fusilli or penne, I use spaghetti Liguori)
  • 2 tablespoons extra virgin olive oil
  • 1/2 onion, diced

Tools Needed

  • 1 pot (for cooking the pasta)
  • 1 large pan (35 cm or larger)
  • Cutting board or Kitchen Robot
  • 4 Meal Prep Boxes, I use these

Procedure

  • Prepare the meatballs: In a bowl, combine the ground beef with salt, garlic, Italian herbs, and pepper. Shape the mixture into small to medium meatballs.
  • Cook the meatballs: Heat oil in a pan on over medium to high heat. Add the onion, sauté for about 5 minutes, until brown. Add the meatballs, allow them to cook , occasionally shaking the pan to ensure even cooking.
  • Add the tomato sauce: Add the tomato sauce to the pan and let the meatballs cook in the sauce for about 15 minutes over low to medium heat.
  • Cook the pasta: In a separate pot, bring water to a boil and cook the pasta according to package instructions. Drain the pasta.
  • Combine Everything: Once the meatballs are cooked, add the pasta to the pan and mix gently over low heat. Serve hot or divide into 4 meal prep containers.

To make it keto, you just need to:

  • Switch the regular pasta with a keto-friendly pasta

Storing tips

Store for up to 5 days in the fridge, preferably in an airtight container.

Reheat tips

To prevent the pasta from drying out add a splash of milk, cream, or broth to the pasta before heating up.

Stovetop: Warm it in a pan over medium heat, stirring occasionally, until heated through.

Microwave: Place a damp paper towel over the container to trap steam. Microwave in short bursts of 30 seconds, stirring each time, until it’s warm.

Oven: Place the pasta in an oven-safe dish, cover with foil, and warm at 175°C for 10-15 minutes.
