Lean Carbonara Pennette: delicious, high-protein, also suitable for meal prep!
Ingredients
For 2 portions
- 160 g of penne pasta (for more protein, you can use Red Lentil Pasta or Dalla Costa Protein pasta)
- 1 teaspoon of oil (5 ml)
- 150 g of smoked chicken breast or lean turkey bacon (I used this one)
- 2 egg whites + 1 whole egg
- 30 g of grated Parmesan or High protein grated Cheese
- Freshly ground black pepper
Tools Needed
- 1 pot (for pasta)
- 1 medium pan (20 cm or larger)
- Cutting board or Kitchen Robot
- 1 small bowl, to combine eggs and Parmesan
- 2 Meal Prep Boxes, if you want to save for later the pasta, I use these
Procedure
Instructions:
- Start cooking the pasta, according to package instructions.
- Make the egg mixture, whisking in a small bowl the 2 egg whites with the whole egg and the grated Parmesan. Add a generous grind of black pepper. Set aside.
- Cut the turkey bacon or smoked chicken into small strips or pieces.
Sauté in a non-stick pan with a teaspoon of oil until crispy and golden brown. - Wait for the pasta to be cooked, and save some pasta water for later.
- Drain the pasta. Add the cooked pasta to the pan with the turkey bacon or chicken. Turn on the heat.
- Pour the egg and Parmesan mixture into the pan with the pasta. Stir quickly off the heat to prevent scrambling. Add more pasta water if the sauce needs more creaminess.
- Plate the pasta and top with an extra sprinkle of Parmesan and freshly ground black pepper.
