High Protein Carbonara Pennette

Lean Carbonara Pennette: delicious, high-protein, also suitable for meal prep!

Ingredients

For 2 portions

Tools Needed

  • 1 pot (for pasta)
  • 1 medium pan (20 cm or larger)
  • Cutting board or Kitchen Robot
  • 1 small bowl, to combine eggs and Parmesan
  • 2 Meal Prep Boxes, if you want to save for later the pasta, I use these

Procedure

Instructions:

  • Start cooking the pasta, according to package instructions.
  • Make the egg mixture, whisking in a small bowl the 2 egg whites with the whole egg and the grated Parmesan. Add a generous grind of black pepper. Set aside.
  • Cut the turkey bacon or smoked chicken into small strips or pieces.
    Sauté in a non-stick pan with a teaspoon of oil until crispy and golden brown.
  • Wait for the pasta to be cooked, and save some pasta water for later.
  • Drain the pasta. Add the cooked pasta to the pan with the turkey bacon or chicken. Turn on the heat.
  • Pour the egg and Parmesan mixture into the pan with the pasta. Stir quickly off the heat to prevent scrambling. Add more pasta water if the sauce needs more creaminess.
  • Plate the pasta and top with an extra sprinkle of Parmesan and freshly ground black pepper.
